BRUSCHETTA

8-10 good-looking roma tomatoes - chopped
1 bunch basil leaves – thinly sliced
3 cloves garlic – pressed
Olive oil
Salt and pepper
Baguette
Parmesan Cheese

Combine tomatoes, basil and garlic in a glass bowl. Salt and pepper and nearly cover with olive oil. Cover bowl with plastic wrap and leave on counter for a few hours; stirring occasionally.

Slice some good bread. Brush with olive oil and toast in the oven at 350 for 10 min or so until lightly browned.

Pile tomato mixture on toast (draining some of the liquid) and garnish with grated parmesan.
